To start, combine the mayo, rosemary, thyme, salt, pepper, and zest of half an orange in a small bowl with a whisk. Set aside.
Preheat the air fryer to 400℉/200℃. If your oven doesn't have an air fry option, you can just set the oven at 400℉/200℃ too.
Take 8 of your preferred tortillas and prepare according to package instructions before assembling. We went with Siete's grain-free version and we had to heat up the tortillas on pan or griddle.
On each of the 8 tortillas, layer on 1 TBSP of mayo, 1 TBSP of stuffing after that, 1 TBSP of turkey, and 1 TBSP of cranberry sauce. We recommend placing the stuffing, turkey, and sauce just next to the middle of the tortilla.
Begin to roll the tortilla inward, over and over until there's about 1/2 inch of tortilla exposed.
In another small bowl slurry together flour and water. Take a little of that mixture and dab at the remaining part of the tortilla that is exposed. This will help to keep the tortilla from unraveling.
Place taquitos on the baking sheet with the seam side down. Spray with olive oil. Air fry for 5-7 minutes or bake in the oven for 7-9 minutes. Flip and spray again with olive oil. Bake for an additional 3-5 minutes.
While the taquitos heat up, put gravy in a small bowl and microwave for 30 seconds at a time until warm.
Allow to cool for a few minutes, enough to handle. Serve with gravy as a dip and enjoy!
