This Thanksgiving leftovers recipe was our way of making the aftermath of Thanksgiving food a little more interesting. I don’t know about you but our leftovers always seem to be turkey, stuffing, and cranberry sauce. We’ve done the sandwiches and have reheated a spread on a plate countless times. We thought maybe a taquito might switch things up and with our aioli, it sure does!

Roll it up

This recipe is so easy if you have all the fixings from a hearty Thanksgiving meal. If you need to make these side dishes from scratch, check out these recipes below:

  1. Start by putting together the aioli. Add the mayo, herbs, salt, pepper, and orange zest into a small bowl and whisk together. Set aside. In a separate bowl, mix together your flour of choice and water. Set aside as well.
  2. Preheat oven to 400℉/200℃. We set ours to air fry mode but if you don’t have that you can just bake. You’ll just need to keep it in for a little longer.
  3. Prepare the tortillas per package instructions. We use the Siete cassava flour tortillas because it’s grain-free! Heat the tortillas on the griddle (this just makes it faster) or plan before placing them on a plate.
  4. Take 1 TBSP of each leftover and the aioli. Be mindful of the amount you put in because you need to be able to roll the tortilla over. We added stuffing, turkey and cranberry sauce to our version. You can layer on the mayo first. Then try to put the remaining ingredients just under the middle of the tortilla.

  5. Begin to roll over one side of the tortilla over the ingredients and continue to roll over and over until a little flap is left visible.

  6. Take the flour mixture and dab your finger into the bowl. Dab onto the remaining area of the tortilla flap before sealing the taquito.
  7. Place these seam side down on a baking sheet lined with aluminum foil. Spray with olive oil. Air fry for 5-7 minutes or bake 7-9 minutes or until golden brown. Heat the gravy in a small bowl in the microwave in 30 second intervals until warm.

  8. Flip the taquitos over and spray again with olive oil. Bake for another 3 minutes. When done, remove from oven and allow to cool before serving with gravy for dipping.

What other fillings can you add?

You can add mac and cheese, potatoes, sweet potatoes, or whatever dishes that have a solid consistency. We avoided adding gravy because any liquids would likely make the taquito break.

How do I store these?

In an airtight container or ziplock bag with the air removed in the refrigerator for up to four days or freeze them for up to six months for the best quality. If you freeze them, make sure to place wax freezer paper on top, bottom, and in between layers. This will help to prevent freezer burn (MasterClass).

Ingredients for Aioli

  • 1 Cup Mayo
  • 1 TBSP Fresh thyme chopped
  • 1 TBSP Fresh rosemary chopped
  • Zest of half of an orange
  • ½ tsp of salt
  • ¼ tsp ground black pepper

Ingredients for the Taquito

Instructions
 

  • To start, combine the mayo, rosemary, thyme, salt, pepper, and zest of half an orange in a small bowl with a whisk. Set aside.
  • Preheat the air fryer to 400℉/200℃. If your oven doesn't have an air fry option, you can just set the oven at 400℉/200℃ too.
  • Take 8 of your preferred tortillas and prepare according to package instructions before assembling. We went with Siete's grain-free version and we had to heat up the tortillas on pan or griddle.
  • On each of the 8 tortillas, layer on 1 TBSP of mayo, 1 TBSP of stuffing after that, 1 TBSP of turkey, and 1 TBSP of cranberry sauce. If you need to prepare those from scratch, check out our recipes linked in the ingredients sections for some inspiration! We recommend placing the stuffing, turkey, and sauce just next to the middle of the tortilla.
  • Begin to roll the tortilla inward, over and over until there's about 1/2 inch of tortilla exposed.
  • In another small bowl slurry together flour and water. Take a little of that mixture and dab at the remaining part of the tortilla that is exposed. This will help to keep the tortilla from unraveling.
  • Place taquitos on the baking sheet with the seam side down. Spray with olive oil. Air fry for 5-7 minutes or bake in the oven for 7-9 minutes. Flip and spray again with olive oil. Bake for an additional 3-5 minutes.
  • While the taquitos heat up, put gravy in a small bowl and microwave for 30 seconds at a time until warm.
  • Allow to cool for a few minutes, enough to handle. Serve with gravy as a dip and enjoy!
