This tiger nut flour oven cake (isn’t that just a cake?) can be made when you don’t have time to stand by a griddle and make our tiger nut flour fluffy pancakes. This grain and nut-free breakfast will give you time back.

I must admit, this oven cake recipe is a happy accident born out of impatience. In the early stages of trying to feed our firstborn, we experimented with countless flour blends and ways of providing a classic pancake. I stood steadfast by the pan, waiting to flip a pancake while our baby was hungry and crying. After a few attempts, I shoved the rest of the batter into a cake pan, popped it in the oven, and voila!

This was one of the first few baked goods I could provide to our child, and I couldn’t have been more proud. For the parents out there, we know what it’s like to try to keep some semblance of a routine and vie for any time saver available. To say it’s challenging is an understatement.

For those who aren’t parents, life is so busy! You could do so much in 30 minutes, like watch a show, work out, start your day with the rest of your morning routine, or get together with other folks. Whatever the case, this recipe can help boost your efficiency and give you back some much-needed time. 

This gluten-free oven cake uses our blend, which includes tiger nut flour. It’s a super flour made from small, nutrient-rich tubers (The Spruce Eats) of the tiger nut plant, which lends a naturally sweet and nutty flavor to the oven cake.

Make those pancakes

We use our all-purpose tiger nut flour blend. This blend has helped us achieve similar results as all-purpose flour but is grain-free and healthy-ish!

  1. Preheat the oven to 350℉ (177℃) if using eggs; otherwise, do this step towards the end of the batter resting. Grease a 9-inch cake pan.
  2. In a standing mixer or large bowl, combine tiger nut flour or all-purpose flour, baking powder, sugar, and salt. Add the egg or egg replacer (per instructions), vanilla extract, and 3/4 cup milk. Mix until combined.

  3. Let the batter rest for 10 minutes if using an egg or 30 minutes if using an egg replacer. Pour into the greased pan and bake for 30 minutes.
  4. Remove from the oven, top with fruit or whipped cream, and serve. Enjoy!

Q&A

How can you tell the tiger nut flour oven cakes are cooked through?

Use the toothpick test by placing the toothpick into the center of the oven cake and pulling it out. If there are no crumbs on it, then it is cooked.

Does the batter need to rest?

If you’re using an egg replacer, we suggest letting the batter rest for about 30 minutes to thicken and fluff.

What other sugars can I use in the batter?

We haven’t tried it with different kinds of sugar. We think the answer is it depends – you could replace the white sugar with brown sugar for example and you may be able to do this with coconut sugar as well.
