Adam made this one night when we were craving a dessert but needed to have something in mind or already prepared. I heard him toiling in the kitchen as I typed out a post, and when he came with a plate of this gooey goodness, I was stunned. Warm, melty, sweet and crunchy. You may already know from our other s’mores pie recipe or even our peppermint cookie recipe that we love combining marshmallows and chocolate.

  1. Combine eggs, cinnamon, and vanilla in a bowl, whisk thoroughly, then transfer the mixture into either an 8×8 or any pan wide enough to fit slices of bread and has some depth, and set it aside.
  2. Crush graham crackers in a ziplock bag until they become small crumbs or dust, then mix them with 1/2 tsp of salt. Pour onto a plate and set this mixture aside.

  3. Assemble the sandwiches by spreading 1/3 cup of marshmallow fluff onto each slice of bread. Break Hershey bars up so that nine pieces are on each slice (or honestly, however much you want). This was the amount that achieved the s’mores magic. Press two slices together to create two sandwiches.

  4. Dip each sandwich into the egg mixture, ensuring both sides are coated. Then, dip the sandwiches into the graham cracker mixture, coating both sides evenly.

  5. Ideally, on a griddle or a medium pan over medium heat, melt 1/2 tbsp of butter. Place one sandwich in the pan and cook until crispy and golden brown, approximately 5 minutes. Add another 1/2 tbsp of butter to the pan, flip the sandwich using a spatula, and cook until the other side is crispy and golden brown. Repeat the process for the second sandwich. Serve and enjoy!

Answers for Questions

How do I make the S’mores French Toast gluten-free or grain-free?

You can use your favorite go-to gluten-free bread. We have yet to try this but a potential graham cracker substitute could be Simple Mills Sweet Thin Cookies if you don’t have a nut allergy. Anything crisp and sweet that can be crushed will likely be a good substitute.

How do I store this and reheat it?

You can store this in an air-tight container in the refrigerator for up to three days. Reheat the sandwiches in an oven or toaster oven at 300F for 3 minutes or until warm.

What are chocolate substitutes?

The Kidney Nutrition Institute has come up with delicious chocolate substitutes for s’mores, including butterscotch chips, cookie butter (yum), and lemon curd. We have yet to try this, but we think these would pair well with fluff.

Equipment

  • 1 8×8 baking dish or dish with depth
  • 1 Spatula
  • 1 Ziploc bag

Ingredients
  

  • 4 Slices Bread of choices
  • 62 g Crushed graham crackers or four large ones
  • 1/2 tsp Salt
  • 1 1/3 Cup Fluff about 1/3 cup on each slice or enough to coat
  • 2 Large Hershey bars 9 individual pieces on each slice
  • 2 Eggs beaten
  • 1/4 Cup heavy cream
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 2 TBSP of butter

Instructions
 

  • Beat together eggs, cinnamon, and vanilla in an 8×8 dish or dish with depth to dip the bread slices into and set aside. This is your egg wash.
  • Crush graham crackers in a ziplock bag into tiny fragments/dust and mix with 1/2 tsp salt. Pour onto a plate and set aside.
  • It’s time to assemble the sandwich. Spread 1/3 cup of fluff on each slice of the bread. Break Hershey bars into individual bars. Place nine pieces of chocolate on each bread slice or your preferred amount.
  • Press two slices together to form the s’mores sandwich. You should have two.
  • Dip each sandwich into the egg mixture on each side. Next, dip the sandwich into the graham cracker mixture and coat both sides.
  • In a medium pan or griddle over medium heat, melt 1/2 tbsp of butter.
  • Put the sandwich down onto the pan or griddle and cook until crispy and golden brown (about 5 minutes).
  • Add another 1/2 tbsp of butter to the pan and flip the sandwich onto the other side with a spatula. Cook until crispy and golden.
  • Repeat the same process for the second sandwich. Serve warm and enjoy!
