Why not make your own fancy cheese?
Make apricot cheese within minutes without too much fuss. Back in the day (or a few years before kids), we attended a party where an apricot white stilton cheese was served. It was so delicious that it was gone within minutes by the guests. I still remember the sweet flavors paired with the sharp cheese.
At that time, I was grasping at straws trying to come with conversation with the guests I barely had anything in common with. I was never much of a extrovert. Would you believe though that this cheese broke the ice for us?
We never found that exact cheese again, but we think this version comes close. It’s amazing how food can bring us together. Why not do the same for you and your family or guests? You could serve this at the next big game day or wine and cheese event. No one has to know that you made it….or everyone can know if you like. These days, the fancy cheeses in the grocery stores seem to cost so much for very little. Get a nice, party-size batch with this recipe and share it with those you love.
Got a bowl and Knife?
Yes? Great, you’re all set. Oh, you may need some cling wrap but that’s if you choose to chill this recipe. Just remember that this recipe works with fours it seems (unintended but helpful). Four ounces of the cheeses, four pieces of apricot (or more if you’re feeling fruity) and at least 4 stalks of chives (adding more will be tastier.
- Roughly chop apricots into small pieces and finely chop the chives as well. You can set these aside. If you have a block of white cheddar, go ahead and shred that.
2. Mix the chives, goat cheese (room temperature), cream cheese (also at room temperature), and shredded white cheddar cheese on low in a standing mixer or large bowl with a mixer. With a spatula, fold in the apricot pieces until evenly dispersed.
3. Form the cheese into a ball or whatever shape you like with the spatula or serve it in a bowl as is. It will be very pliable. For best results, wrap the ball with a large enough piece of cling wrap. You can further shape the cheese ball now for a better shape.
4. We recommend chilling in the refrigerator for at least 1 hour before serving to hold the cheese ball’s shape or make it firmer to spread.
Answers to your questions
Can you use other cheeses?
Yes! We recommend pairing apricot with a hard cheese with the creamy-based one. For hard cheeses: Parmesan, Pecorino Romano, Grana Padano, Blue Stilton (Yummy Bazaar). For creamier cheeses, ricotta or feta (A Couple Cooks). By using these variations, you may end up with a different shape or way of serving than the way we present our cheese here but it should still be just tasty!
Do you need to chill the apricot cheese before serving?
We recommend chilling it in the refrigerator for at least 1 hour to make it hold shape if you’re serving it at larger gatherings, but you don’t have to.
What other dried fruit would go well?
You could use dried cherries or dried cranberries.

Equipment
- 1 Standing mixer or mixer with a large bowl
- 1 Knife
- Cling wrap optional
- 1 Spatula
Ingredients
- 4 oz Plain goat cheese room temperature
- 4 oz Cream cheese room temperature
- 4 oz White cheddar cheese shredded
- 1 TBS Chives
- 4-5 Whole apricot dried fruit pieces
Instructions
- Bring the goat cheese and cream cheese to room temperature. This will make it easier to cream all of the ingredients together
- Roughly chop apricots into small pieces
- Chop chives
- In a standing mixer or large bowl, combine the chives, goat cheese, cream cheese, and shredded white cheddar cheese on low
- With a spatula, fold in the apricot pieces until evenly dispersed
- Using the spatula or with clean hands, form the cheese into a ball or whatever shape you like or serve in a bowl as is
- For best results, wrap the ball with a large enough piece of cling wrap. You can further shape the cheese ball now for a better shape
- We recommend chilling in the refrigerator for at least 1 hour before serving to hold the shape of the cheese ball or to make it a firmer spread.
