Apricot Cheese

Equipment

  • 1 Standing mixer or mixer with a large bowl
  • 1 Knife
  • Cling wrap optional
  • 1 Spatula

Ingredients

  • 4 oz Plain goat cheese room temperature
  • 4 oz Cream cheese room temperature
  • 4 oz White cheddar cheese shredded
  • 1 TBS Chives
  • 4-5 Whole apricot dried fruit pieces

Instructions

  • Bring the goat cheese and cream cheese to room temperature. This will make it easier to cream all of the ingredients together
  • Roughly chop apricots into small pieces
  • Chop chives
  • In a standing mixer or large bowl, combine the chives, goat cheese, cream cheese, and shredded white cheddar cheese on low
  • With a spatula, fold in the apricot pieces until evenly dispersed
  • Using the spatula or with clean hands, form the cheese into a ball or whatever shape you like or serve in a bowl as is
  • For best results, wrap the ball with a large enough piece of cling wrap. You can further shape the cheese ball now for a better shape
  • We recommend chilling in the refrigerator for at least 1 hour before serving to hold the shape of the cheese ball or to make it a firmer spread.
