A Dessert Dip or Honestly, just dessert

Seven ingredients, a flip of a switch, and this pumpkin ricotta dip is all yours. It’s good with graham crackers, on waffles, or just right off the spoon. We stumbled onto this recipe when we were trying to bake a new dish.

With one taste test (and many more) later, we were surprised at how simple yet delicious this was on its own! Still, we marched on with our dish and refrigerated the extra leftovers. The orange zest and pumpkin spices from just this mixture alone were even more refreshing and flavorful after it was chilled. We decided to use this as a dip and we couldn’t be happier.

Our toddler is our taste test champion. He’s a bit of a picky eater. This is on top of allergies already restricting his food options. So when we give him a taste of what we are making and he demands more we know we are on the right track. He would not stop holding out his spoon to dip into the container and we couldn’t blame him. This recipe is simple but delivers on those fall flavors of pumpkin spice. I even find Adam spooning the pumpkin ricotta dip onto a plate with some graham crackers at night for dessert once the kids are asleep. What’s even better is that pumpkin is a wonderful addition to your diet.

Quick and Simple Pumpkin Ricotta Dip

This super easy dip will be a go-to. You can bring this to your next gathering and feel accomplished knowing that you didn’t spend too much time assembling the recipe and that your guests or loved ones are thrilled by it.

To start, zest an orange with a microplane. Combine all of the ingredients in a standing mixer or large bowl. Stir on low or use a handheld mixer on low to incorporate the ingredients.

Can you use pumpkin pie filling?

We recommend using puree for the pumpkin ricotta dip since that is unsweetened and doesn’t contain spices. If you go with pumpkin pie filling, exclude the sugar and spices first and taste test with the ricotta and vanilla extract only. You can add ingredients from there.

I can’t find caster sugar. What do I do?

Don’t worry! Caster sugar is very easy to put together on your own. You just need a spice grinder. Place granulated sugar inside the spice grinder and pulse only once. If you pulse too much, you will have powdered sugar.

What does caster sugar do differently from other sugars?

Caster sugar is great for light and airy textures and will be incorporated more quickly into the dip. It can be replaced with white granulated sugar but since this recipe doesn’t involve baking or cooking, expect to taste more grit in this dip.

  • 420 g or 15oz Ricotta
  • 300 g Pumpkin puree
  • ½ tsp Orange zest
  • ¼ tsp Salt
  • 2 tsp Vanilla extract
  • 4 TBSP Caster sugar
  • 2 tsp Pumpkin spice

Instructions
 

  • Take a microplane and zest an orange to get 1/2 tsp of zest. We started with two swipes worth of zest before adding more so taste as you go to see what you prefer best.
  • Place all of the ingredients inside a standing mixer or in a large bowl. Stir on low or use a mixer to whisk together until well incorporated. See the notes below if you need a tip on how to make caster sugar. Serve and enjoy!

Notes

Making caster sugar is super easy and does not require you to go to the store if your pantry is well stocked. With a spice grinder, take the same amount of granulated sugar and pulse only once. This will help you achieve that texture that in between granulated sugar and powdered sugar.
